While I mostly follow recipes, sometimes I just throw some stuff together. When I was at Hy-Vee on Saturday, the in-store chef was cooking up some Brussels sprouts. I tried one, it was awesome, I bought some sprouts. Guess he's good at his job.
What he didn't have, though, was a recipe — he threw it together earlier that morning. So I asked him how to make those Brussels sprouts. It was as easy as he said it would be. And they tasted awesome. So here's a recipe that includes very little actual measuring. Good luck!
- Brussels sprouts — as many as you think you'd like to eat
- Bacon — 3-6 slices, depending upon how much you like bacon
- Apple — one, chopped into smallish pieces
- Onion — 1/2 cup to 1 cup, depending on how much you like onions
- Brown sugar
- Red wine vinaigrette
In another pan, saute chopped bacon, apple and onion until browned. Add vinaigrette and brown sugar to taste. How do you know how much is too much? Go by smell. If it smells too vinaigretty (not a word), add more brown sugar. Either way, you need to get enough vinaigrette in there to provide a good sizzle for the sprouts. Oh, yeah — add the sprouts now. Let them get coated with the saute mix. It'll take another 5 minutes or so.
After that, dish 'em up. Because there will be a bit of juice, we put them into small bowls. They were almost identical to what the chef had going at the store. Sweet and bacony (not a word) and tasty. Healthy? Not with that much bacon. But it's a nice change of pace for sure.
If your only experience with Brussels sprouts is having them boiled for 10 minutes and dumped on your plate, try this recipe. Like a lot of foods, it's all in the preparation.

Bought some sprouts 2 weeks ago, added it to veg into the oven for 1hr @ 180c, was still a bit hard. Will try your way next time.

My kids would love your recipe, except for the apple and sprouts. Patty will sprinkle some olive oil, sea salt and garlic over them. Then broil them for 1/2 hr or something and just blacken them a bit.
Faizel - it works pretty well. A good rolling boil will soften them up.

kevin - broiling them for a half hour will blacken the hell out of them.
Try the sprouts at McFosters Natural Kind Cafe - Awesome!! We have tried to imitate them, and come close. Essentially sauted in olive oil (and we use some butter too) with lots of garlic - freshly minced. Much like Patty's. But sauted for just 15-20 minutes or so depending on how tender you like them.
Also, we like sprouts simply boiled (on stove or in microwave) till tender then with some butter and a touch of lime juice.
